We started making this easy pumpkin bread at my house about 15 years ago! One day my kids came home from preschool with this recipe and a sample. It was delicious! I haven’t found an easier or more delicious version. I don’t find it overly sweet and I like that about it. No need to pull out your electric mixer, either. You can make it more your own by adding semi-sweet chocolate chips or chopped pecans or another nut of your choice. Spread it with cream cheese if you like. The recipe makes two loaves, so if we make it just for ourselves, I freeze a loaf to pull out later. Sometimes, we have it along with our Christmas breakfast as well, or give it as a gift to a neighbor.
Here’s the recipe for delicious and easy pumpkin bread:
Pumpkin Bread
Ingredients
- 2 cups canned pumpkin
- 1½ cups sugar
- 1 cup oil
- 3 eggs
- 3 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1½ tsp cinnamon
- 1 tsp ground cloves
- ½ tsp salt
Instructions
- Preheat oven to 350°.
- Grease and flour two 8X4" loaf pans.
- In large bowl add the pumpkin, sugar, oil and eggs. Stir to combine.
- Combine all the dry ingredients in a separate bowl.
- Add dry ingredients to the pumpkin mixture and stir to combine well.
- Bake on a lower rack in oven for about 50 minutes.
- I usually test with toothpick for doneness. Cool in pan a bit on cooling rack before turning out to cool further.
